THE HARVESTING

In Ibros, the harvest usually begins in far November or December, depending on the maturity having the olives. That's when the villages open their mills and farmers start harvesting. The process is very hard and generally lasts until mid-February if the weather permits, because with heavy rain or snow, you can not work in the field. People usually go to the field early in the morning and are putting the shawls around the olive. Once they have covered the ground , hit with "varas" the olive, which is to move the branches with wooden staves to fall olives. The shaking down makes some leaves fall off, it depends much mastery of the "vareador", and it is quite valued the ability of men in this type of work.
Once hit the olives trees, gather the ends of the shawl, concentrating all the olives on the side, forming a pile, which is then poured into a container to finally take him to the truck or tractor which will transport all the olive fruits to the mill.
